Ingredients
-1 cup of Oats (either Quaker old fashion oats, or you can get organic oats in bulk from Wegmans and the Healthy Grocer)
-2 small spoonfuls of Organic Powdered Peanut Butter (Wegmans or the Healthy Grocer... totally worth buying!!)
-2 cups of water
-1 spoonful of cinnamon
-1 cut up banana
-any other cut up fruit or nuts of your choice
1. Put 2 cups of water, and 1 cup of oats in a small saucepan on the stove, and put the stove on high. (This makes a pretty big bowl so if you don't want that much, just use 1 cup of water and 1/2 cup of oats)
2. While you are waiting for the water to come to a boil, slice one banana and any other fruit of your choice
3. Once the water comes to a boil, turn the heat down to low, and let it simmer until the oatmeal thickens and it is no longer watery.
4. Stir in the banana, powdered peanut butter, and cinnamon, and let it simmer for another minute or two.
5. Pour the oatmeal in your bowl and top with cut up fruit or nuts! Enjoy!!
Rose, I love McCann's Irish oatmeal with mashed banana, but your recipe sounds even better. Never heard of powdered peanut butter, but it sounds like it would eliminate the fat, is that right?
ReplyDeleteWhere can I find a lovely checked teapot like yours, it's such fun to look at!
Hi Mona! You're right about the powdered peanut butter, it's 85% less fat, but still tastes great!:) And I asked my mom about the teapot and she wasn't sure she said it was a gift! Haha
ReplyDeleteHey Rose! Glad you are bringing my breakfast of choice to the people. You can also ad ground flax or chia seeds for a major nutritional boost, it also makes the texture of the oatmeal creamier because the oils from the seeds are released when cooking. Love your blog! Keep it up!
ReplyDeleteHey, thanks for the comment! I have used flax and chia seeds in my salads and smoothies but didn't think about throwing them in my oatmeal, great suggestion!
